I have the (mostly) same question. Currently running USG 3P and have been looking at UDM SE but didn't really want to spend $500. Cloud Gateway Ultra might be perfect for my needs at a much cheaper price point. Currently have the USG, a 16 port PoE Switch, and 4 APs with my controller hosted on Docker on my Synology.

Not as good of course, but a lot better than otherwise. You only need a 2.5gig+ switch to take advantage of WiFi 6e speeds, you will get the benefits of the 6ghz band regardless. Hello!
